La Galette, le Soleil du Roi

This year, Pastry Chef Aymeric Pinard unveils Le Soleil du Roi, an exceptional Galette des Rois adorned with golden and copper hues, inspired by the splendour of Versailles and the Sun King.

Beneath its crisp inverted puff pastry lies a generous almond frangipane, an almond praline made with Château d’Estoublon olive oil, a tangy mandarin marmalade and a delicious almond crunch. At its heart, a fève inspired by the coins Marie-Antoinette offered to her guests crowns this regal creation.
