Christmas log cake, La Grille Royale

This year, Pastry Chef Aymeric Pinard unveils La Grille Royale, an exceptional Yule log inspired by the majestic gates of the Orangerie at the Palace of Versailles, exquisitely sculpted in chocolate with delicate rose-copper hues.

Celebrating the vibrant flavours of citrus, this creation brings together a refined interplay of textures and aromas: a soft almond sponge, an airy crispy layer, a light yoghurt mousse, and the tangy notes of mandarin and yuzu. Château d’Estoublon olive oil adds a silky Provençal touch to this truly regal creation.
