Try Picholine, a real 'star' of flavours thanks to its peppery notes.
Harvest: Early November to late December. Pressed in our own mill.
Storage: In stainless steel vats, nitrogen cap, temperature-controlled room.
Powerful, fiery, bitter, it is a flavour enhancer. Very typical, it brings out the green flavour of our early vegetables, on raw fish in carpaccio and beef tartare with a dash of lemon. Excellent in sorbet or ice cream.
